Rustys Food & Barbecue Set To Fire Up New Look Clubhouse

The Mount Coolum Golf Club is excited to enter the ‘new normal’, using the enforced COVID closure of the Clubhouse to shake-up the place with the hopes of delivering a spirited new approach to our Bar and Bistro products for members and locals.

A fresh new coat of paint on the Clubhouse, a contemporary range of beers – both bottled and pouring on tap – from local craft brewers, and a few new faces on the staff are just the start of the rejuvenated hospitality offering

The Club is excited to announce the appointment of Rustys Food and Barbecue as the contract caterer for the Golf Club bistro, functions and catering operations.

Rusty will be bringing his brand and authentic slow smoked and rustic American barbecue style food to the Club, and operating the first true dedicated low’n slow barbecue style restaurant on the Coast.

Low and slow barbecue, which involves cooking different cuts of meat over charcoal and wood for several hours, makes the meat juicier, more tender, and more flavourful. The longer cooking time breaks down the fatty cells in the protein and releases more flavour throughout the meat. Combined with the ability to infuse the meat with smoked wood flavours and adding rubs can provide a taste sensation like no other.

While barbecue has been around since man invented fire, the low and slow style has become more prevalent with the emergence of the BBQ Pittmaster reality TV series in America. The adoption of this style barbecue competitions here in Australia, including the Sunshine Coast BBQ Festival at Aussie World and the famous Burleigh Low’n Slow BBQ Championships on the Gold Coast, has further pushed this trend into the mainstream, with dedicated barbecue restaurants popping up in major cities around the country, such as Adelaide’s Low & Slow American BBQ. The fashionable trend of food vans and pop-up style eateries has also boosted the popularity of rustic street food and low and slow barbecue.

It is Rusty’s vision to bring this experience to the Coast, with Rustys Food and Barbecue operating out of the Mount Coolum Golf Club, providing members, guests and visitors with an amazing cuisine of low and slow barbecue dishes for lunch and Friday Night dinner.

Don’t be fooled by thoughts that barbecue is all about the meat and protein. Rusty’s flair and knowledge gained through many years in the kitchen, combined with his passion for American style barbecue, has allowed him to create some mouth-watering salads, vegetarian dishes, in addition to the perfect complimentary side dishes to his tender slow-cooked meats.

Most recently Rusty has been operating an aforementioned pop-up eatery, providing personal functions and catering services for events and breweries including Sunshine Brewery in Maroochydore.

Rusty has also perfected his barbecue artistry through competing in barbecue competitions, taking out several category awards such in Brisket, Lamb, Beef and Pork Ribs. Rustys barbecue team, the Charcoal Project, are a prominent contender at many barbecue competitions from Melbourne to Cairns.

Beginning Tuesday 14th July, Rusty will be serving Lunch from 11:00 to 3:00 Tuesday to Sunday, and will also be providing our regular Friday Night Dining from Friday 17th July.

Initially Lunches will be a bistro type menu with barbecue influences, while Friday Nights will see a unique low’n slow barbeque menu, with a few familiar options and an extensive kids’ menu.

The Club has also revitalised their draught beer offering, and now are pouring Heads of Noosa Brewing Company’s Japanese Lager from tap. The Japanese Lager has made the Top 100 list of Australian Craft Beers in its first year, and won several awards at state, national and international Craft Beers Shows. The Club is also stocking a range of other local and interstate craft beers. The Wine List has also undergone some changes to better compliment the barbecue meats and meals being served from the kitchen.

The many changes around the Club is designed to evolve the Mount Coolum Golf Clubhouse Bistro from just a kitchen servicing golfers into a unique dining experience for members and visitors, and providing a place for locals to enjoy some of the best craft beers, meats and fresh produce from the Sunny Coast region.
